Purpose of the position This position has the responsibility of providing a wide variety of high quality, large quantity food products to meet the needs of a diverse population of University of Minnesota Morris students, faculty, staff, visitors, and friends. This is a lead worker position that must be capable of operating a wide variety of equipment that produces both hot and cold food, organizing work group to meet production standards and time line.
Employees in Dining Services are University of Minnesota employees supervised by Sodexo management staff, UMM 's contracted food service management company, and are governed by the Teamsters and University bargaining unit agreement.
Timely preparation of food items in large quantities 80%
Directs and participates i n the timely preparation of a wide variety of food items i n large quantities, including special diet foods.
Cooks gravies, sauces and soups from scratch. Prepare entrees from raw product or direct
staff in the preparation of entrees from scratch.
Prepares casserole, vegetables, pasta, soups, gravies, steaks, roasts, cookies, pies, icings, whipped toppings, eggs, toast, bacon, pancakes, hot beverages, and other food items. Prepares garnishes and presents upscale menu items for catered events such as special seafood, fancy hors d'oeuvres, etc.
Adjusts recipes to produce the proper quantity of finished food products.
Informs and directs other workers in proper portioning, slicing, plating, chilling, and refrigeration of raw or cooked foods.
Follows specific ingredient and recipes from different ethnicities to create the flavors and tastes of the culture.
Reprocesses already combined food to produce new food items.
Prepares food products that are attractive to students, faculty, staff and visitors from a variety of diverse backgrounds and experiences
Meets campus food preparation and presentation standards
Works collaboratively and effectively with coworkers and other staff from a variety of US and
Helps put away freight in a timely manner and also needs to procure items from storage areas for current, next day, and future meals to make or to get prepped.
Follows cost control procedures.
Maintain quality and cleanliness standards 20%
Follows established food-handling procedures. Maintains clean and sanitary conditions in work area (i.e., cleans work surfaces, wipes up spills)
Cleans work areas to insure proper food sanitation and safety, including refrigerators, grills, stoves, steam cooking equipment, sinks, spills on the floor, etc. Uses independent judgment in the production of food and in the direction of work in the food preparation area.
The University of Minnesota Morris Dining Services seeks a Cook. This position is 9 month, 100% time/40 hour week, Monday - Friday and weekends. This position is represented by a Bargaining Unit: Teamsters. The qualifications are as follows:
Essential knowledge. skills and abilities
Must have knowledge of food standards and preparation as obtained from at least two years of experience or education in the quantity production of food.
High school graduate or GED.
Must be able to read, write and interpret the English language.
Must be able to perform simple math calculations.
Must be able to move up to 50 pounds on an occasional basis and up to 30 pounds on a consistent basis.
Must be able to stand for up to four hours at a time.
