Position Summary: The Club is looking for a talented culinary professional who is innovative, creative and up-to-date on trends, and has a full understanding of club traditions and culture to fill the position of Executive Chef. The Executive Chef is responsible for the entire club’s foodservice operation including the Main Kitchen, Banquet Food Service, Halfway House, Poolside Café and Paddle Hut, while working efficiently and following all procedures for producing quality food. In addition to directly supervising food operations and the culinary staff, the Chef is expected to plan, order and approve plating, follow and enforce safety standards, GMP and other quality procedures. The Chef works closely with the Food and Beverage Manager and the Catering Manager to assure the food service in all areas of the Club exceed Member expectations and is delivered promptly, as planned. Annual food sales are in excess of $1.3M.
The ability to lead, motivate and mentor aspiring individuals with hands-on training and coaching throughout the operation.
Serve as a role model and set the standard for all employees to maintain high quality and consistent member service.
Provide menu planning, recipes, and expectations to the Executive Sous Chef and kitchen staff.
Oversee all kitchen preparation of food quality and consistency for all a la carte and banquet service outlets.
Interact with the membership and be readily available for consultation on menus for Club Events and Private Events.
Maintain kitchen GMP’s, safety and food sanitation practices.
Responsible for procurement, inventory and safe keeping of all food, paper supplies, small wares, kitchen equipment, chemicals and capital equipment for the food operation.
Responsible for all foodservice labor scheduling and labor cost controls and closely monitor to adhere to budgeted expectations.
Maintain acceptable food cost controls as established in the annual budget.
Work closely with the General Manager for design of foodservice operating budget and controls.
Responsible for interviewing, hiring and terminating all foodservice personnel.
Oversee the fulfillment of any reasonable member request.
Communicate effectively with Food and Beverage Manager, Catering Manager, Servers and all department Heads.
Oversee general upkeep of kitchen equipment and preparation facilities.
Prepare quality, consistent food for all food service areas including Member Dining, Banquets, 19th Hole, Patio, Halfway House, Paddle Hut, and Poolside Cafe.
Effectively manage all kitchen positions, including line cooks, prep cooks, pantry stewards, expeditors and dishwashers.
Supply content for club marketing including photos, videos and newsletter articles.
Ability to use tools, including knives and other kitchen equipment and applying pressure and torque to cut, move and lift food, trays, dishware and other related meal items.
Must be able to reach, stretch and crouch while using tools.
Must be able to stand for extended periods of time; occasionally in excess of several hours.
Must be able to climb stairs and otherwise access various work areas.
