ISU Dining at Iowa State University is seeking applicants for a Sous Chef at the Heaping Plato food facility within The Hub. ISU Dining employs approximately 250 full-time and 1,800 student employees. This team works together to serve the 36,000 students, staff, and guests of the university in 5 residential dining, 17 retail, and catering locations.
This Sous Chef will assist in directing the ISU Dining Operations to ensure high quality, safe, and cost- efficient production and service to students, staff, and university guests with a culinary flair and consistent high quality customer service; participate in and supervise food ordering, food production, service, cash handling, catering events, sanitation, and housekeeping/facilities maintenance. The Sous Chef will assist with management of full-time, part-time, and student personnel; new pricing, budgeting, and meeting sales and financial targets; and department decisions regarding policies and procedures. This position will cover shifts and act as Unit Manager in the absence of a Unit Manager and Chef Manager.
The successful candidates will have excellent leadership skills and comprehensive knowledge of food, along with the ability to plan for large volume production.
Summary Supervises food production, team training and development, food procurement and inventory control, and financial controls.
Example of Duties â¢ Supervises, directs, and trains on food preparation and production support activities for multiple workstations. â¢ Develops and implements relevant training to increase knowledge and ability of staff. â¢ Assists in coordinating the food, materials, and equipment for daily use, including but not limited to: ordering, receiving, storing, issuing, producing, serving, and transporting all daily food items. â¢ Helps determine appropriate levels of stock, oversees inventory counts, and tracks shrinkage. â¢ Oversees distribution of recipes, serving line worksheets, production schedules, and all necessary documentation to maintain high levels of service in conjunction with production cost goals. â¢ Evaluates product and service offerings; and recommends, revises, and implements changes. â¢ Tests and evaluates equipment, products, and menus; develops and tests recipes, as requested; and makes recommendations. â¢ Controls income and expenses and recommends, revises, and implements changes as necessary using resources efficiently and effectively while maximizing sales. â¢ Participates in coordination and supervision of daily operations. â¢ Maintains safety and sanitation standards according to the Iowa Health Code.
