Located within the Global Plaza (West Campus), the Caf & Market at Crossroads and Midnight Oil are two premiere RIT Dining Services venues. These facilities are united by their passion to serve and deliver legendary customer service and experiences that will help support the RIT Community.
Reporting to the General Manager of the Caf & Market at Crossroads, the Chef De Cuisine provides leadership and oversight for two of RIT Dining Services facilities the Caf & Market at Crossroads and Midnight Oil. The main emphasis is oversight of Crossroads with a supporting role in Midnight Oil. Crossroads seats about 250 + guests and serves approximately 2700 people per day in a retail venue. Patrons who frequent Crossroads have the ability to choose from 8 diverse serving platforms and a convenience store. Crossroads is open Sunday thru Friday while college is in session and reduced hours during breaks and summer.
Midnight Oil is a retail coffee shop that seats 50+ guests and serves approximately 1000 people per day, which also spans breakfast, lunch, dinner and late night meals, 7 days a week during the academic year.
This position has primary responsibility for managing operational aspects of an exemplary dining services program, and for providing legendary customer service to students, faculty/staff, affiliated departments and University guests. Supervises work of others, including planning, assigning and scheduling work, reviewing work and ensuring quality standards, training staff and overseeing their productivity. May offer recommendations for hiring, termination and pay adjustments for full time, but does not have the responsibility for making these decisions. The Chef de cuisine should also be a culinary leader among their peer group, setting a bar for excellence in the operational that defines student expectation for all subsequent dining experiences at RIT. This position will be responsible for food production, menu planning and culinary management.
Detailed Job Description Scheduled hours are Monday-Friday 7AM-4PM, however are subject to change based on business needs. Additionally, flexible scheduling/work hours may be required during break week, summer and intersession. In addition, large institute events may require additional hours (such as commencement (graduation) and Imagine RIT Festival). Must have the ability to work nights, weekends and holidays and be on-call as needed.
Responsible to all customers and co-workers to provide excellent service in a friendly, sincere and courteous manner.
Assists the General Manager in overseeing the day-to-day operations. Must be able to learn all areas of Crossroads Market and Cafe and Midnight Oil to provide coverage as business needs require.
Serves as the manager on duty in the absence of the General Manager.
Supervision of staff, directing work as needed while working in unit(s)
Responsible for ensuring full-time and student staffing levels are met and maintained
Provides training and leadership to the full time staff and student workforce to maintain quality service.
Produces a variety of financial reports to evaluate cost and efficiencies for the unit.
Create and maintain a welcoming professional environment. Responsible for monitoring staff morale. Take appropriate action as needed in consultation with General Manager.
Possess an awareness and basic knowledge of allergens, food sensitivities and dietetic restrictions.
Show a willingness to work with the customer and management in resolving potential diet limitations of the customer.
Responsible for learning, documenting opening and closing procedures unit and securing the operation
Responsible for cleanliness of facility as well as proper sanitation and safety procedures.
Knowledge of cash handling procedures and register system
Responsible for data input and updates for the inventory, register and labor accounting
Responsible for ordering products from RIT approved vendors.
Adhere and manage all compliance, safety and health regulations.
Report to work on time, wear proper uniform, adhere and enforce departmental and university policies..
Carry out special assignments as requested by management
Attend meetings and seminars as requested by senior management.
Other duties as assigned.
Required Minimum Qualifications 3-5 years supervisory experience Serve Safe and Allertrain certification, or ability to obtain within 6 months of employment Computers, printers, copiers, register machines, credit card machine, phone, scanners Point of Sale systems Menu management systems PC on windows based platform
Required Skills: Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse constituency. Strong time management, organizational and multi-tasking skills. Good professional judgment and ability to independently make sound business decisions. Skilled at addressing a variety situations and negotiating successful outcomes with a diverse group of stakeholders. Works professionally, ethically and with integrity; uphold the vision, mission and core values of the University. Possess a passion for food and knowledge of current food trends. Experience managing multiple business lines. Experience in performance management and development. Operational knowledge of industrial kitchen equipment (dishwasher, oven, ventilation systems, etc.). Operational experience with a variety of food service applications and computerized menu management systems. Ability to learn and adapt to new systems and applications as needed. Knowledge of Kronos timekeeping software or similar system. Ability to work nights, weekends and holidays and be on-call as needed.
