The Riviera Club is a Private, full-service Country Club and is seeking a full-time Executive Chef to lead its culinary program. The annual food revenues are currently budgeted $450,000.
Responsibilities: The Executive Chef reports directly to the Director of Food & Beverage and ultimately to the General Manager and will be the leader of a dynamic culinary team and multiple food and beverage outlets. Outside of the main clubhouse food and beverage operation, the Club also has a seasonal Beach Stand Outlet that serves its 7,000 Members. The Club is noted for training Olympic and Champion Swimmers and has one of the largest outdoor pools in the country.
The successful candidate will also be the face of the Food and Beverage operations. Membership has come to enjoy daily contact from the culinary team varying from interactions at dining tables, interactive cooking classes, special chef table events to private parties and events. The Executive Chef will be responsible for development and execution of all dining and banquet menus, with an ability to continually change the menu as needed.
The ideal candidate will understand the intricacies of working in a private club providing a quality food and beverage operation for a well-traveled clientele. Ability to identify and adapt to changing local taste will be necessary for any candidate while staying within budget parameters. The Executive Chef will assist in the departmental operating budget and outline yearly capital needs.
3+ years as an Executive Chef or Executive Sous Chef in a Private Member Club or high-end establishment
A culinary degree or an established history of working in a mentoring environment
CEC or nearing CEC designation helpful
Open to all ACF Certified Chefs and Cooks and all NON-ACF Certified Chefs and Cooks
History of mentoring culinary staff
Working knowledge of JONAS, Microsoft Word/Excel/PowerPoint helpful
Strong interpersonal, communication, and organizational skills
