The Pastry Chef is responsible under the direction of the Executive Chef and Chef d' Cuisine for preparing quality baked & pastry items for club restaurants, banquets, and special events.
Previous baking from scratch experience is required, as well as the knowledge of knowing when it is not beneficial to make an item from scratch. Must be able to read, understand, and execute banquet event orders and written directions. The Pastry Chef will participate in menu planning for dessert items and should be interested in creating new and unique items. Staying up to date with current trends, techniques and modern plating is important.
The Pastry Chef will be responsible for the following items: Breakfast Pastries, Cakes, Tortes, Tarts, Pies, Ice Creams, Sorbets, Mousses, Verrines, Breads, and any other items. It is important to rotate seasonal menus based on local ingredients. The importance of an overall team atmosphere in The Country Club operation is paramount. The Pastry Chef should be willing to help in all aspects of the kitchen to achieve member satisfaction.
This person will maintain a clean, sanitary , safe, and organized work area, keeping all equipment clean and in good working condition.
Properly stores and labels all food products both in food production and items received from deliveries.
Must be attentive and adhere to the Pastry Department work schedule and be punctual, follow all club policies and procedures.
Properly breaks down work station and cleans the pastry & baking area at the end of every shift.
Performs other appropriate duties requested by Executive Chef / Chef d' Cuisine.
2-3 years experience at management level.
Preferred Private Club experience
Culinary degree/ Certified by American Culinary Federation
Must be willing to work all shifts including days, and evening hours, weekends, and Holidays.
Must be a professional dedicated to your craft
Willingness to learn and experiment with modern techniques and presentations
