The Annapolis Yacht Club (AYC) is a 1600+ member Yacht Club with very active social, racing, and cruising programs. Large international events include the Star Class World Championship, Rolex International Women’s Keelboat Championship, and many North American championships hosted every year at AYC.
The Chef De Cuisine will be involved in the AYC Activity Center , an exciting new facility for member enjoyment. This is a great place for families, young and old, to enjoy AYC in a relaxed and casual atmosphere. While enjoying the views of Spa Creek, members can enjoy an open kitchen restaurant experience. The Activity Center features a pool, fire pit, outdoor bar, snack bar, fitness center, and activities room for kids.
The Chef De Cuisine will work very closely with Executive Chef in supervising food production for all food outlets, banquet events and other functions at the club. Supervises food production personnel, assists with food production tasks as needed and assures that quality and cost standards are consistently attained.
Prepares or directly supervises the daily preparation of soups, sauces and “specials”
Assists the Executive Chef with monthly inventories, pricing, cost controls
Assumes complete charge of the kitchen in the absence of the Executive Chef or Clubhouse Manager
Assists Executive Chef and PM Sous Chef with supervision of employees, sanitation and safety, menu planning and related production activities
Consistently maintains standards of quality, cost, eye appeal and flavor of foods
Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability
Makes recommendations for maintenance, repair and upkeep of the kitchen, its equipment and other areas of the club
Prepares reports, costs menus, makes schedules and performs administrative duties as assigned by the Executive Chef
Personally works in any station assigned by the Executive Chef
Ordering of all chemicals, paper supplies and produce
Perform an am and pm pre shift meeting
Make sure all employee’s follow proper uniform and hygiene policies
Ensure proper closing procedures are done and kitchen is locked
Nightly emails are sent to review the night and email product list
Prefer candidate with Culinary Degree, ACF credentials, and work experience in an upscale private club, luxury hotel ( Ritz Carlton, Mandarin Oriental, Four Seasons, Rosewood, St. Regis), or Thomas Keller Restaurants.
