Position Summary The Assistant Director of Dining for Culinary Operations has responsibility for managing all aspects of the University of Oregon Central Kitchen operations and Catering culinary staff. The Central Kitchen is a 20,000 sq. ft. production kitchen that serves the entire campus producing over 12,000 meals daily.
The Central Kitchen also provides all culinary support for University Catering producing over 3 million in annual catering event sales. The Assistant Director for Culinary Operations oversees all Central Kitchen operations, overseeing all culinary standards, recipe, and menu development, production, sanitation, staffing and training. This position supervises the Catering Chef, Sous Chef, Pastry Chef and a staff of 45 classified staff, plus student and temporary employees. Makes independent decisions regarding staffing, training, ordering, menus and daily operations. Budgetary responsibility includes the allocation of staff and pricing of menus; purchasing of foods and equipment; manage income and costs to remain viable.
Additionally, this position provides support to the culinary effort of Retail Operations and Residential Operations in regards to product development, procurement, and execution of services. This position reports directly to the Associate Director of Housing, Director of Dining Services.
Work conditions and physical demands are typical of those found in the food service industry. These conditions may include slippery floors, extreme temperatures, heavy lifting and standing for long periods.
This position is required to obtain a Food Handler Permit and OLCC Service Permit; and must be willing to work a varying schedule which may include nights, weekends and holidays.
Essential Personnel: This position requires the employee to make every reasonable effort to arrive at campus at their regularly scheduled times during inclement weather and/or university closures unless otherwise notified by their supervisor or manager. This includes times when the university may be closed. Essential personnel must provide reliable and current contact information at all times.
A B.A. or A.A. degree in foodservice/culinary/hospitality management or related field, or an equivalent combination of education and strong demonstrated food service management experience
Five years supervisory experience in the food service industry. Experience must include assigning and evaluating work, and dealing with disciplinary issues
Experience managing all aspects of a commercial kitchen staff including all hiring, training and scheduling
Excellent communication skills; be comfortable in a variety of public/social settings and working with diverse staff
Demonstrated creativity in developing menus and recipes for a variety of authentic food styles
Demonstrated experience costing menus, ordering food products and supplies and ensuring maintenance of equipment
Read and write in English for purpose of preparing reports, budgets, and documents, and to read and understand policies, procedures and safety information
ACF Culinary certification or equivalent certification of Chef de Cuisine or higher
Experience managing a unionized food service staff
Experience in a college or university food service operation
HACCP Certification or significant experience working within a HACCP plan
Experience with centralized production using Cook-Chill and Reduced Oxygen Packing methods
