Scope of Responsibilities:

The chef position at Devil's Lake Yacht Club requires an experienced person who understands how to manage people, control costs (both labor and food), create nightly specials, and manage banquet service along with daily dining. The chef is responsible for the consistent preparation of innovative and creative cuisine of the highest quality and flavor with an eye for presentation. The goal is outstanding member satisfaction, and increased covers and revenues. The chef will interview, hire, train where necessary, supervise, counsel and motivate their team.
Duties & Responsibilities:
Train, develop and motivate supervisors and culinary staff to meet and exceed established food preparation standards consistently. Teach preparation according to well-defined recipes, with a constant eye toward improving those recipes if warranted.
Display exceptional leadership by providing a positive work environment, counseling employees as needed and demonstrating a dedicated and professional approach to management.
Delegate as appropriate to develop supervisors and subordinates to accept responsibility and meet clearly defined goals and objectives.
As part of the management team, display an attitude of loyalty, dedication, confidentiality and a willingness to cooperate with other team executives and staff. Accept projects and responsibilities as assigned by the General Manager and complete in a timely manner.
Develop innovative and creative menus according to season and needed price modifications.
Contribute to Club morale by providing the appropriate menus and presentation of food and beverage for the employees’ meals.
Make purchases that assure high quality and member satisfaction plus meet expenses by proper planning and utilization of all kitchen equipment.
Maintain proper payroll controls and related expenses through the establishment and adherence to staffing guidelines that are consistent with guest and food cover forecasts.
Maintain cost of sales by control and coordination of purchasing, receiving, storage, production, portion control and security of all food inventories. The target of a 45% food cost will be used.
Administer Kitchen in a business-like, high quality manner in keeping with the highest professional standards.
Maintain excellent communication with supervisors, peers, subordinates, and members. This includes attendance and active participation at staff meetings, food committee and management meetings. Conduct meetings with the General Manager, Kitchen Supervisors, and the entire food department to ensure open and timely flow of information and ideas.
Assure that all federal, state and local health and safety standards are consistently observed and adhered to.
Strong interaction with dining room staff via pre-meal meetings explaining menu items, ingredients and tasting.
Supervise all aspects of menu, training and food production in conjunction with the General Manager.
Develop job descriptions for all Food Production staff and evaluate job performance of each.
Establish and maintain a regular cleaning and maintenance schedule for all food areas and equipment. This includes the physical appearance of all kitchen personnel while working the front of the house.

The Devils Lake Yacht Club is, located in Manitou Beach Michigan. The club is a seasonal operation from April through September.
Devils Lake Yacht Club became a private club in 1940 and currently has 580 member families from all areas of the United States mostly from Toledo, Detroit, Ann Arbor, and Chicago. The operating season is mid-April through September. During this season, the club offers extensive programs in Adult and Junior sailing. In addition, the club provides social, entertainment and educational events for adults and juniors and hosts the longest continuous running regatta for lightning sail boats in the United States, During the season, the club also hosts weddings and local charitable events.
The club has just concluded their 81st year.
