Bay Colony Beach Club ,is one of Naples most upscale Private Clubs in Naples Florida, that overlooks the Gulf of Mexico and is located within the Bay Colony Estates.

An amazing opportunity exists for a passionate and driven chef with high-end, fine dining experience within the Club or Hotel Industry to join our Culinary Team as a Sous Chef.

DUTIES AND RESPONSIBILITIES

Performs daily preparation of all soups, sauces, stocks, dressings, entrees and specials in accordance with the standards set by the Executive Chef.
Oversees the hot line and expedites as needed.
Oversees production in the kitchen
Assists with the training of all the staff, helping team members to develop and improve their skill level.
Ensures completion of all prep and menu items in accordance with recipes and special requests.
Assists with creating new menu items, daily specials
Assists or conducts daily lineups with service staff.
Preps for soups, salads, cold, hot, buffet stock and back up.
Communicates between shifts and ensures adequate prep for the next shift.
Coaches, trains, develops and supports all team member training and advancement
Assists in physical food inventories
Assists in the ordering of foods and products for the kitchen.
Oversees and conducts opening and end of the evening duties (food storage, cleaning, equipment is off, lock doors).
Assists in planning and preparing staff meal.
Assists with the planning of the daily menus and theme evenings.
Participates in the reviewing and updating menus
Inspect the cleanliness and organization of the line and workstations; rectify and deficiencies. Maintain throughout shift.
Assists in other duties as assigned by the Executive Chef.

EDUCATION and/or EXPERIENCE

Minimum 3 years’ experience as a cook or in a culinary role at a high-volume upscale restaurant, club or resort.
High School diploma or equivalent.
Culinary degree from an accredited school preferred.
Ability to prioritize and organize work assignments and delegate work.
Experience with restaurant specific software and Point of Sale Programs preferred
Must be computer proficient. Knowledge of windows-based programs such as Word, Excel. Must be able to use email and utilize internet.
Skilled in meal planning, menu development within budgeted food costs
Thorough knowledge of plating and presentation.
Knowledgeable of food and wine pairings.
Excellent communication skills and ability to solve problems in the workplace.
Ability to run operation in the absence of the Executive Chef

CERTIFICATIONS, LICENSES, REGISTRATIONS

Certification in food safety is required
CPR/AED certification preferred.
