Position Summary: Ensure proper food production for meals and functions. Monitors, supervises, directs, assists and trains other culinary staff.
Essential Job Functions:
Supervise and coordinate activities of kitchen staff. Monitor preparation, apportionment and garnishment of foods.
Delegate work assignments to culinary staff. Monitor club dining room reservations and adjust food preparation and staffing needs. Make adjustments to work assignments where necessary.
Assist stations with proper and timely food production. Provide instruction and training where needed.
Participate in the preparation and cooking of food items. Expedite for service line and special functions.
Ensure completion of PM food preparation and special requests, with AM Cooks. Ensure that all stations are set for PM service, functions, special requests.
Conduct PM inventory and orders for following day. Prepare list of AM food preparation items for next morning. Lock kitchen at end of shift.
Receive any late deliveries; rotate product; label product using first-in, first-out method.
Monitor and enforce standards for proper food handling, sanitation and safety, at all times. Ensure adherence to all applicable state and local health and safety regulations.
Promote teamwork and positive morale among staff through continuous communication and leadership.
Other Duties & Responsibilities:
Assist with monthly inventory and food orders.
Perform other food preparation and kitchen tasks, as requested.
May perform other assignments and duties, as area needs require.
Skills & Knowledge:
Three to five years of prior culinary experience in a premiere resort or private club.
Culinary degree or formal training preferred.
Advanced knowledge of various cooking methods, preparation of soups, sauces, and stocks; butchering; product identification; intermediate pastry and baking; ability to perform all functions of junior cooks.
Strong communication and interpersonal skills, with ability to read, write, speak, and understand in the English language.
Ability to perform basic arithmetic (add, subtract, multiply, divide), with understanding of fractions and units of measure, for recipe adjustments and measurements.
Basic knowledge and skill in budgeting and food/labor cost containment methods.
Supervisory, leadership and organizational skills, with ability to lead, motivate, and train other staff.
