About the Club
The Woman’s Athletic Club of Chicago is a private club for women nestled in the heart of downtown Chicago. Established in 1898, the WAC was the first athletic club for women in America. “Created by ladies, for ladies,” it elected Mrs. Philip D. Armour as its first president. The prestigious membership included the wives of many prominent Chicagoans, including names like McCormick, Ryerson, and Swift. For 125 years, the WAC has been identified with graciousness and elegance – an oasis in the city's heart.
In 1929, the Club moved into its building on North Michigan Avenue. The Club’s location is part of the “Magnificent Mile,” Chicago’s premier commercial district. In 1991, this architectural treasure, designed by renowned architect Philip B. Maher, received landmark status in recognition of its beautiful and historically significant exterior.
Members use its facilities for meetings, entertaining, wellness and lectures. Over the years, such diverse public figures as Rosalyn Carter, Cokie Roberts, Michael Frayn, Ogden Nash, Nan Kempner, Barbara Bush, and Diane von Furstenburg have participated in Club programs.
Today, the Club continues to represent generations of women who are trailblazers carving out physical, intellectual, and recreational space. The Club seeks the same in our team of professionals. The WAC team is nothing short of innovative, inspired, and adaptable.
Presently, there are 1,117 members, ranging in age from 15-99, and the average age of members is 59.
Food and beverages revenues in 2022 were 2 million, with 60% of those sales being member dining and 40% consisting of member and club events. The 10-story clubhouse comprises 85,000 square feet and includes a dining room, lounge, cafe, rooftop terrace, ballroom, and eight other private rooms that can accommodate parties from 4 to 225 seated. In addition, the Club has athletic facilities, a swimming pool, and a full-service spa.
The Position
The Executive Chef is expected to create memorable culinary experiences for members and guests and to lead the team with the same care and enthusiasm. She or he is a team player that is interested and engaged in making the Woman’s Athletic Club a wonderful place to be and work.
Tasks and responsibilities include but are not limited to; creative development and implementation of all menus (à la carte, member functions, and private events), food production, and presentation. She or he is also accountable for the department's financial performance while maintaining the highest professional food quality and sanitation standards.
The Executive Chef reports directly to the Assistant General Manager and works closely with other department leads.
Key Objectives
The Executive Chef must be well-versed in tasks associated with meeting members' expectations. Specific responsibilities are as follows, but not limited to:
Ensure that all food is consistently superior and understands that consistently producing minor items is just as important as producing an elegant, à la carte dinner.
Create clean, healthy, contemporary dishes and menus.
Create rotating menus on a seasonal basis while incorporating daily and weekly features.
Develop and document recipes.
Implement specific controls to ensure consistency and quality.
Provide excellent and necessary resources at the culinary team’s disposal.
Exude creativity. Thinking “outside of the box” for member dining experiences and events is welcomed and encouraged!
Lead BOH initiatives concerning accident prevention, staff training and retention, and sanitation and safety standards.
Must stay current with culinary trends and be well-versed in accommodating a variety of food allergies and intolerances. Incorporates gluten-free and healthy items on the menu and train all staff to handle gluten-free dishes and requests properly.
Is comfortable conversing and interacting in the kitchen and dining rooms with both members and team members. The use of tact in communications with members is expected.
Provide cooking classes, online tutorials, and gourmet dinners for members.
A hands-on leader who mentors and develops a pipeline of talented and creative individuals through building and shows a genuine interest in the future and personal growth of the staff.
Qualifications
A track record of consistently delivering an excellent product in a timely fashion from multiple outlets. Whether it is a fine dining meal in the dining room or a salad at the cafe, both meet or exceed member expectations for consistent quality and delivery.
The Executive Chef has a proven record of accomplishing high-level dining expertise with a minimum of 5 years leading a cohesive team.
A proven record of accomplishment in controlling food and labor costs.
Is adept at creating and managing a budget and provides food purchase specifications to control food quality and costs.
A confident, proactive team builder with a history of attracting, developing, and retaining high-performing teams.
Has strong leadership skills with verifiable strengths in inspirational, hands-on leadership, financial performance, and people skills.
Enjoys face time with the members/guests and regularly visits tables when time allows.
She or he has a passion for excellence that is contagious to all that serve with her or him and is a lifelong learner with a calling to serve others.
English speaking with Spanish communication preferred.
Culinary school or college degree preferred.
