Position Overview:
The Grill Chef at The Misquamicut Golf Club is a (Seasonal May-October) pivotal position within the culinary team, responsible for overseeing the grill station and ensuring the preparation and presentation of grilled menu items meet the highest standards. The Grill Chef is tasked with crafting high-quality, flavorful dishes that enhance the dining experience for our members and guests. This role requires exceptional grilling skills, creativity in menu development, and a commitment to maintaining impeccable kitchen operations.
Key Responsibilities:
Grilling and Food Preparation:
Mastery of Grilling Techniques: Expertly grill a variety of proteins, including steaks, chicken, fish, and seafood, and burgers to the desired doneness, while ensuring consistency in flavor and texture. Responsible for any and all grill buffets for outing and special functions
Vegetable and Side Dish Preparation: Grill a range of vegetables and prepare complementary side dishes, sauces, and accompaniments.
Customization and Special Requests: Accommodate special dietary requests and customize dishes to meet individual member preferences without compromising quality.
Menu Development and Innovation:
Collaborate on Menu Design: Work closely with the Executive Chef to develop seasonal and event-specific grill menus that reflect current culinary trends and local ingredients.
Specialty Dishes: Innovate and introduce new grilled dishes, ensuring variety and excitement in the menu offerings.
Feedback Implementation: Regularly seek feedback from members and guests to refine and improve menu items.
Qualifications:
Essential:
Experience: Minimum of 3 to 5 years of experience as a Grill Chef or Line Chef in a similar role, preferably in a high-volume, upscale dining environment.
Culinary Expertise: Proficient in a wide range of grilling techniques, with strong knowledge of different cuts of meat, seafood preparation, and grilling times.
Leadership Skills: Proven ability to lead a team, manage kitchen operations, and maintain high morale among staff.
Communication: Strong verbal communication skills (English or Bilingual)) to effectively coordinate with kitchen and front-of-house staff.
Attention to Detail: Keen eye for detail in both the preparation and presentation of dishes.
Preferred:
Education: Culinary degree or relevant certification from a recognized culinary institution.
Golf Club or Fine Dining Experience: Previous experience in a luxury golf club, resort, or fine dining establishment is highly advantageous.
Specialized Skills: Knowledge of smoking, BBQ techniques, and open-flame grilling is a plus.
Physical Requirements:
Stamina: Ability to stand for long periods in a high-heat environment.
Lifting: Capability to lift and carry heavy items, up to 50 pounds.1
Adaptability: Comfortable working in a fast-paced, high-pressure kitchen setting.
