Job Summary: Manages all aspects of the club’s culinary operation and ensures the highest quality food and dining experience for its members.
Specific Job Duties
Hires, trains, coaches and disciplines the club’s culinary and stewarding staff.
Completes weekly culinary schedule in accordance with budgeted labor guidelines.
Orders all food products ensuring highest quality and best pricing.
Orders all paper goods and cleaning products.
Ensures highest level of cleanliness and safety in kitchen facility.
Reports any equipment issues to management and maintenance staff.
Creates rotating menus and specials with seasonal and locally sourced ingredients.
Works with F&B Management team to create club special event menus (Easter, Mother’s Day, etc.)
Works with F&B Management Team and General Manager on the completion of an annual club events calendar.
Brainstorms ideas for increased member participation and usage with F&B Team.
Meets in conjunction with Event Coordinator with potential event hosts to plan menus.
Trains staff in culinary practices and procedures to ensure consistency of food.
Creates standard recipes for all core items including soups, dressings, etc.
Creates par stock for core items including dry goods, cleaning supplies and paper goods.
Completes monthly inventory of all food products.
Works with General Manager on the completion of the annual Operating Budget.
Consistently monitors costs to budget and takes corrective action as necessary.
Regularly visit dining rooms to solicit feedback from the membership.
Attends all F&B, Staff and F&B Committee meetings.
Maintains professional certification through the ACF.
Maintains Servesafe Certification.
Attends meetings and conferences of the ACF and other professional organizations.
Keeps abreast of culinary trends through continuing education and self-study.
Sets annual goals for culinary program to be discussed with General Manager during the annual review process.
Completes any special projects assigned by General Manager or F&B Committee.
Minimum of 5 years experience as Executive Chef (or equivalent)
