Detroit Golf Club, an exclusive and private member-owned Club located in Detroit, Michigan, is seeking a talented individual with a strong history of high-end and high volume banquet and ala carte dining operations to fill the Executive Chef position. The position is available immediately.
Detroit Golf Club was founded in 1899 and has a prominent history in the local community as well as the golf world. Most recently, the Club is the host location for the PGA TOUR’s Rocket Mortgage Classic. The 75,000 square foot clubhouse is nearing completion of a multi-million dollar renovation which includes parts of the kitchen, ala carte dining areas (indoor and outdoor), the golf shop, and the member golf bag storage areas. There is tremendous member excitement for the opening of the new areas scheduled for mid-late September. A critical initial focus of this position will be the successful re-launch of this area and the continued building of a strong, relevant and creative dining program for the membership to consistently enjoy on a regular basis.
The Club has a busy food and beverage program. Annual food and beverage revenues are approximately $3.5m, with $2.5m in food revenues. The Club ala carte food and beverage program operates 10 months/year and is closed in January and February. Private banquets and events may occur in every month. There is room for growth, especially in the winter months.
The ideal candidate for this position will have private Club experience, a demonstrated history of budget management with a focus on COGS and labor expense controls, be able to effectively oversee several dining operations simultaneously (ala carte dining, banquet dining, golf course food outlets), have an interest in working collaboratively with Club members and fellow team members in a constructive and creative environment, creative menu development and execution skills, quick response time for all menu inquiries, ability to respond and follow-up in a timely and professional manner, ability to embrace and consistently create member menu preferences, knowledge of POS systems and data mining techniques, and excellent interpersonal communication skills with a follow through to completion mindset. This position will lead by example while displaying an organized and detail-oriented approach to operation. Experience in a private Club facility, along with ACF accreditations, is most preferred but not required. A strong history of at least 10 years leading in a fast-paced high-quality culinary environment, preferably in a private club setting, is ideal.
Serving as the executive Chef, this individual is the critical liaison between front and back of the house team members, and will ensure proper knowledge and skills are in place for all support staff. Presence in the kitchen as well as displaying a genuine interest in interacting with diners while “walking the floor” is important. Expected at all times are very high standards of cleanliness, safety and sanitation. Proper time management is a key skill for success in this position.
This position will work very closely with the Catering Director, Food and Beverage Director and the Dining Room Manager. This position will report directly to the Clubhouse Manager. This position oversees all kitchen staff including cooks, executive sous chefs and all other support personnel. Active participation in weekly management meetings and periodic committee meetings, as well as meetings with members to consult on menu planning, is expected.
Primary responsibilities include, but are not limited to, member satisfaction; employee support, training and mentorship; daily consistent execution of providing outstanding standardized menu items; maintaining and developing strong and positive relationships with all vendors and suppliers; creating a culture of respect and trust; ability to define and uphold kitchen performance standards and expectations; direct management and oversight of all kitchen staff; assist with the training of menu details with the front of the house staff; detailed inventory control and reporting on a monthly basis; event cost detailing.
