Chef/Manager

Overview

Provide operational support to the Food and Beverage Manager, ensuring high quality standards of food and guest service.  Assists in hiring, training, inventory, purchasing, analyzing and entering data, sanitation compliance, cash control, menu planning and implementation.  Supports the Cedar Fair Cornerstone philosophies of safety, service, courtesy, cleanliness, and integrity.

Responsibilities

• Assists the Area Manager and Supervisors in making sure food locations are guest-ready during operating hours.
• Assists the Area Manager in closing down the food locations at the end of the day.  This would include checking out locations to make sure they are left clean and organized and investigating over/shorts.
• Follows up on daily audits turned in by the Safety and Sanitation Supervisor.  Reports findings weekly to Food and Beverage Manager.
• Assists in cleaning and winterizing food locations at the end of the season and cleaning and preparing locations in the spring for opening day.
• Assists Food & Beverage Manager and Area Manager in monitoring staffing levels to meet demand in the park.
• Willing to travel to other parks as needed in the off season to assist with Halloween and Winterfest events.
• Learn all relevant aspects of the Food Trak system.
• Assists in weekly food inventories.
• Enters food inventory data into Food Trak weekly.
• Develops and implements associate training with regards to equipment in all locations.  Training includes how to use and care for all fryers, grills, ovens and refrigeration.
• Ensures all temp logs are being kept up to date and that all PPE is in place and being used.
• Enters daily waste logs and transfer sheets into Food Trak.
• Works with Supervisors and Team Leads on requisition forms, getting them to the warehouse on time and working with Supervisors and Team Leads to maintain proper par levels.
• Takes a hands on approach and works in the stands with the associates.
• Works with the catering team to ensure events are on time and meet the guests’ satisfaction.
• Cleanliness.  Works to keep all food locations clean and organized.
• Trains and oversees daily tasks of Food staff and that all kitchen operations are executed in a timely way to meet park standards.
• Implements quality control standards for foods locations and performs inspections to ensure compliance.  Reviews department policies and procedures to improve service and efficiency.
• Hires, trains, and develops staff to maintain a high standard quality of food.  Ensures all guest service standards and practices are being met according to Michigan’s Adventure standards.
• Adheres to and enforces all Cedar Fair and specific Park policies and procedures, including safety, attendance and EEO policies, and demonstrates commitment to customer service in all aspects of employment.
