Management of culinary operations and ensure consistency of high quality of products and ingredients along with innovative and delicious food served at Rocky Fork Hunt and Country Club.
Cooks, utility workers, dishwashers, and other employees including contracted labor performing duties in the culinary department.
Ensure guidelines for food quality standards are followed.
Assist in the development and implementation of standard operating policies and procedures.
Conduct regular inspections to evaluate quality of food preparation. Focusing on; quality, taste, portion control, timeliness, and presentation.
Maintain high standards of cleanliness and sanitation in all productions areas including all equipment and storage areas.
Set an example for employee appearance.
Monitors and reports on any maintenance needs for all food service equipment. Follows through on completion of repairs in a timely manner.
Ordering food products and other ingredients assuring that quality
Input on new menu items and recipe development.
Maintains a high level of quality products, services, and integrity to achieve maximum member satisfaction.
Human Resource Management:
Maintain a high level of team morale by creating a harmonious and respectful environment.
Develop recognition/award system to acknowledge superior job performance.
Maintain a high level of communication with entire Food and Beverage team and reinforce the integrity and professionalism of the culinary department.
Have a high level of culinary knowledge, skills, and ability.
Assists with compliance with all local, State, Federal, OSHA laws and regulations including health and environmental standards.
Efficiently and effectively manages member feedback.
Be available and willing to interact with members during meal periods.
Accepts responsibility to follow club policies, procedures and adhere to the content of the Employee Handbook; to assure awareness of such by employees throughout culinary operations and Rocky Fork.
Maintain personal and professional discipline always. Represent Rocky Fork Hunt and Country Club with high moral standards and respect.
Ability to mentor and develop staff to meet the high levels of quality and expectations of the membership.
Understand and comply with workplace harassment laws and handbook guidelines as it relates to workplace harassment.
Willing to submit to a criminal background check.

Education and/or Experience
Preferred but not limited to:
Associate degree (A. A.) or equivalent from two-year college or technical school and or,
Five to ten years related experience, training, apprenticeship, or an equivalent combination of education and experience.
American Culinary Federation Certified Sous Chef certification or higher.
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, procedure manuals, and recipes. Must be able to speak and communicate effectively before groups of members or employees of the club.
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent.
Must be proficient in the operations of a computer, laptop, and tablet. Must have the ability to create documents in Microsoft Word and Google Docs. Must have the understanding and common use of electronic mail.
Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Must have strong problem solving and decision-making ability.

Additional Salary Information: This job would required the salaried person to work an average of 45 - 50 hours a week. Understanding that during high season (summer and December) this range may increase.
